			<content:encoded><![CDATA[<p>BSCAH held a Pot Luck and graduation ceremony at 11:30am for the graduates of the second session of the Healthy 360 senior program.   During the ceremony, the seniors received their certificates for completing the Healthy 360 program.  The seniors brought in dishes from the recipes they learned from the class.   The seniors brought sucotash salad, spinach salad with tangerines, and a tossed salad with shredded, cabbage, lettuce, onions, and shredded carrots.  Olga, a senior graduate, also made her own thousand island dressing from scratch!!</p>

<p>Our two community-run farmers markets make fresh food available and affordable, while building our local economy and creating places for neighbors for meet and greet.</p>

<p>We grow food for our community and provide support to help others do the same. We manage two urban farms (the UCC Youth Farm and Hands and Heart Garden) and work with an ever-growing network of over fifty gardeners representing over a dozen community and backyard gardens throughout East New York.</p>

<p><span style="color: #b5101c;"><strong>Youth Internship</strong></span></p>

<p>Over 20 young people participate in our Internship Program every year. In this intensive 9-month program, young people engage in hands-on learning around environment, health, community development, leadership and social justice.</p>

<p>Through Community Supported Agriculture (CSA) we create a direct buying relationship between consumers and regional farmers. Customers buy a share in the farm and receive weekly packages of fresh produce at discounted prices.</p>

<p><span style="color: #b5101c;"><strong>Highlight of the Youth Program,</strong><strong> from Deborah Grieg (deborah@eastnewyorkfarms.org):</strong></span></p>
<p>One youth that stands out is Jannatul Rahman. She is from Bangledesh, and when she first started with us, she was 14 and was not comfortable with English. She has since worked with us for 2 years as a Youth Intern, growing food in our 1/2 acre site for the farmer&#8217;s market, and working with neighborhood gardeners. This past season she helped to manage a nearby garden, independently taking care of chickens and veggies and running tours with neighborhood kids. She is now applying to colleges for pre med and wants to have her own production spot so that she can sell at the market.</p>

<li>Preheat oven to 350F (180C). In a medium size bowl, combine margarine and fructose, beating until light and fluffy. Mix in egg white and almond extract. Gradually stir in flour, baking soda, and cream of tartar; mix well.</li>
<li>Form into 1/2-inch (1.5 cm) balls. Place on a nonstick cookie sheet.</li>
<li>Dip a flat-bottomed glass into flour and press down on each ball to flatten cookie. Top each cookie with an almond slice. Bake for 8 to 10 minutes, until lightly browned. Transfer to parchment or wax paper to cool.</li>

<li>Cut the cake in half; tear one half into small pieces and set aside.</li>
<li>Cut the other half into 12-14 thin slices; arrange in the bottom of a wax paper lined 13&#8243; x 9&#8243; x 2&#8243; baking pan, overlapping as needed.</li>
<li>Spread softened ice cream over cake, pressing down to smooth. Gently press the small cake pieces into the ice cream. Cover and freeze.</li>
<li>Just before serving, slice strawberries and sweeten to taste. Cutdessert into squares and top with strawberries.</li>

<li>1/2 tsp Baking soda</li>
<li>1 1/2 tsp Baking powder</li>
<li>1/3 cup Sugar</li>
<li>3 tbsp Dry buttermilk</li>
<li>3/4 cup Water (room temp)</li>
<li>1/3 cup Vegetable oil</li>
<li>Liquid sugar substitute</li>
<li>Equal to 1/4 cup sugar</li>
<li>2 tsp Vanilla</li>
<li>1/2 cup Liquid egg substitute @ Room temp</li>
<li>1/4 cup Margarine @ room temp</li>

<li>Place dry ingredients in mixer bowl and mix at low speed to blend well.</li>
<li>Combine 3/4 cup water, oil, sweetener, vanilla and egg substitute and mix with a fork to blend. Add margarine to flour mixture along with liquid mixture and mix with a spoon only until well blended.</li>
<li>Spread evenly in a 9-inch square pan which has been greased with margarine.</li>
<li>Bake 30-35 minutes at 375 degrees F., or until a cake tester comes out clean and the cake pulls away from the sides of the pan. Cool to room temperature and cut 4 X4 to yield 16 equal servings.</li>

<li>1/2 cup Shortening</li>
<li>2 tablespoon Sweetener</li>
<li>2 teaspoon Vanilla</li>
<li>2 Eggs; beaten</li>
<li>1 cup Sifted all-purpose flour</li>
<li>1/2 teaspoon Baking soda</li>
<li>¼ cup Chopped nuts</li>

<li>Melt shortening and chocolate over low heat. Remove from heat. Add liquid sweetener (forgot to put in the recipe that it was liquid), vanilla and beaten eggs. Stir until well blended. Add flour and baking soda; mix well. Stir in nuts. Pour into greased (can spray with Pam) 8&#8243; cake pan. Bake at 325 for 20 mins; cool. Cut into 30 squares</li>

<li>1/4 teaspoon Black pepper</li>

<li> Chop and combine fajita filling in a shallow bowl</li>
<li>Add sliced vegetables to vinegar mixture and marinate for 15 &#8211; 30 minutes.</li>
<li>Place vegetables in a large nonstick skillet over medium-high heat for 5 minutes or until vegetables are cooked but still slightly crisp. Drain any left-over liquid and place vegetables in a serving dish.</li>
<li>Place vegetables on table along with the following condiments in their own small dishes: 6 eight inch flour tortillas (preferably whole wheat) (heat in microwave for 1 minute) reduced fat cheddar cheese salsa low fat sour cream Assemble fajitas by rolling 1/6 vegetable mixture and desired toppings into a tortilla.</li>
